A yummy meal enjoyed on an island. Sprout salad, carrots, celery, jicama, and Green Monster Hummus
I love a good sprout salad. It is fresh, tasty and makes you feel charged up and ready to go.
A bit about sprouts – sprouts have protein, are low calorie, contain Vitamin C and 6 of the 8 B vitamins, high in folate, a good source of thiamine. They also have minerals such as iron, magnesium, phosphorus, zinc, copper, manganese. They have trace amounts of calcium. They also contain omega-3 and omega-6 fatty acids. I have several different versions of sprout salads that I make. This recipe was enjoyed on a canoe day trip.
Reflections Sprout Salad
- 1 cup Shredded carrots
- 2 cups Bean sprouts
- 1/2 cup Alfalfa sprouts
- 1/2 cup Pea sprouts
- 1/2 can of Chick peas
Dressing
- 1/2 cup Olive oil
- 1/4 cup Apple cider vinegar
- 2 tbsp Dijon mustard
- 1/2 tsp Pink Himalayan salt
- 1 tsp Black pepper
Directions
- Add all the salad ingredients into a large bowl.
- With kitchen scissors, cut up all the sprouts into a size that fits nicely on a fork – about a inch or so long.
- Assemble the dressing in a mason jar, seal with a lid and shake until combined
- Pour 1/2 dressing on the salad and toss. If you feel it needs more dressing, add in small increments to taste.
- Let sit covered in the fridge for a few hours.
If going on a canoe day trip, make in the morning before you go, put in a container that seals tightly to avoid getting dressing everywhere. Make sure it is kept cool.
When I make my own salad I do it by handful not by cup. You can use your hand as a measure of one and combine your salad this way. My hands are very big so actually do make about a cup portion. If your hands are small, be careful with the dressing – you will want to reduce the amount.
