Harvest Colours Squash Soup – ready to eat
Hi autumn embracers,
I really enjoy the fall. The crisp air, the amazing colours and bug free hikes fuel the need for warm food. While I follow a mostly raw eating approach, I like to have warm foods as well. A salad after a warm bowl of soup is a great dinner.
I make this wonderful soup quite often and it never fails me. Let me know if you make it and have any suggestions to make it even better
Harvest Colours Squash Soup
- 1 butternut squash – peeled and diced
- 4 organic carrots – peeled and diced
- 2 soft apples or pears (you know the ones that your family won’t eat)
- 1 onion – chopped
- 1 1/2 tsp curry
- 1/2 tsp cinnamon
- 8 cups of filtered water
Directions
- Peel and dice the butternut squash and put into a bowl (just over 4 cups).
- Dice your carrot and put into a bowl.
- Dice your apples (leave peel on).
- Dice your onion.
- Heat your pan. When hot, reduce to medium heat and add onion. The heat will make them not stick. Be sure to stir quickly to ensure they do not stick.
- After about one minute the onions should start to change colour.
- Add the diced carrots and combine.
- Let cook for one minute, stirring frequently.
- Add squash and combine.
- Let cook for 4 minutes, stirring frequently. Your onions will be translucent by now.
- Add diced apples and combine.
- Let cook for 1 minute, stirring frequently.
- Add curry and cinnamon, stir to combine.
- Add water so that all vegetables are covered.
- Let cook for 30 minutes on medium heat (simmer not boil. If it starts to boil turn down the heat).
- Test for doneness with a fork. If your fork goes easily into a piece of squash you are ready to blend with an immersion blender.
- Turn off heat.
- Place immersion blenders into pot and puree into a smooth finish.
- Don’t stress if you miss a few pieces (you can add them to your bowl when serving).
- Let stand for 10 minutes.
Serve and enjoy. Salt and pepper to taste. When I made this soup, I served it as a first course and then followed it with I Love My Life Salad. It was a wonderful dinner.
