Tasty Caesar Salad – a delicious gluten-free, dairy-free salad

Hi Caesar Salad Lovers,

I love Caesar salad.  Eating a gluten-free, dairy-free diet does not mean you can’t have your favourites – you just need to adjust your thinking a bit to make it happen.

This tasty Caesar salad will delight everyone in your family.

Tasty Caesar Salad

Dressing

• 1 cup soaked cashews
• 1 organic lemon – juice only
• 2 tbsp organic apple cider vinegar
• 2 tbsp Dijon mustard
• 1 clove garlic (if large or two if small)
• 2 pitted dates
• 1 tsp kelp flakes
• 1 tbsp ground hemp
• 2 tbsp filtered water

Salad

1. 2 organic romaine hearts (to serve four)
2. 2 tsp capers
3. 2 tbsp rice cake pieces
4. Salt and black pepper to taste

Directions

Dressing

1. Add all the ingredients to a high speed blender with the plunger attachment in to ensure even mixing.
2. Mix until combined.

Salad

1. Clean lettuce and spin to dry in a salad spinner.
2. Rip lettuce into bite size pieces.
3. Take 50% of the lettuce and add to serving bowl.
4. Pour approximately 2 tbsp salad dressing on lettuce and mix to cover the lettuce (if you like more dressing add it)
5. Add remain lettuce to bowl and mix with dressing covered lettuce.
6. Add capers
7. Add rice cake pieces
8. Combine
9. Add freshly ground black pepper and salt to taste.
10. Pour remaining Tasty Caesar Salad dressing into a mason jar with lid.  Store in fridge.  Keeps for 5 days so it is better to make small fresh batches or share a larger batch with a friend.

Tips

• Soaking cashews – in order to get the creamy texture and look I used soaked cashews.  Just take the amount required place in a bowl.   Cover the cashews with filtered water and let sit for 2 hours.  Drain the water after the two hours and the cashews are ready to use.
• Kelp flakes – you can buy them ready to use.  I did not have any kelp flakes so I cut up some strips off my larger kelp pieces and ground them in a coffee grinder until they were flakes.
• Ground hemp – you can buy it ground – again I did not have any so I ground it in my coffee grinder.  Be careful not to over grind it or will make a large ball.  A two second pulse should do it.
• Rice cake pieces – these are the pieces that are left at the bottom of your bag of rice cakes.  Save them for salad toppings..  If you are using a new bag of rice cakes, open it and shake a few of loose pieces onto the salad.
