Friendly Shopper Swiss Chard, Open Sesame Green Beans with Generation Sweet Potato Fries

The other day when I was shopping at Organic Garage, I got to chatting with another shopper who told me how he loves the Swiss chard his wife makes.  He gave me a rough idea how she makes it, so I bought some chard, as it was on sale.  I decided to make the recipe even though he was not quite sure on ingredients as he had never made it before – he was the person who bought the groceries and the one who enjoyed his wife’s cooking.  A great partnership if you ask me.

Friendly Shopper Swiss Chard

Ingredients

• 1 tsp Coconut oil
• 1/2 white onion
• 2 large cloves of garlic or 4 smaller ones
• One bunch of organic Swiss chard – red or white or bright lights

Directions

1. Chop the onions.
2. Chop off the ends of the chard and dice into smaller pieces.
3. In a heated fry/sauce pan, melt the coconut oil and add the onions and cook until almost translucent.
4. Add the ends of the chard to start cooking them as they take longer.
5. Chop the leaves of the chard into 1 inch segments.
6. When the onions are translucent, add the garlic using a garlic press and stir quickly.  Do NOT let the garlic burn as it make the recipe bitter.
7. Immediately add the chopped leaves of the chard and combine with onions, chard stems and garlic.
8. Let the heat of the pan steam the leaves and they will reduce – take about 3 minutes.
9. Salt and pepper to taste.
10. Stir and remove from heat and let rest for 5 minutes.
11. Enjoy.

Tips

• Seriously, don’t burn the garlic.  I tried a similar recipe in the summer and burned the garlic and decided I did not like the recipe.  It was the friendly shopper who convinced me to try it again.  It made the difference of loving and hating this chard recipe.
• Chard or Swiss Chard comes in white, red or a colour combination of yellow, red, white and purple.
• Swiss Chard is super easy to grow in your garden.  This spring, plan to create a space in your garden to grow some.  If you do, the multicoloured variety is called ‘Bright lights’.
